As always any fun delicious kitchen experiment starts with a random thought in the middle of the night. My insomnia had struck again and i lay awake in bed thinking random thoughts. I considered getting up and baking banana bread for my breakfast the next day but remembered I didn’t have any bananas in the house. Then i remembered my ripening avocados and thought, “Hmmm, I wonder if there is such a thing as avocado bread?”
And so began the internet search that lead to today’s lovely creation! You absolutely must try it at home, especially if you have kids that you just can’t get to eat their fruits and veggies! Or if you’re just looking for another fun yummy healthy bread for your cookbook.
Go on, give it a try! 🙂 I guarantee you your most moist, crumbliest, yummiest bread yet!
*Makes one small loaf so double the ingredients if you want a larger one.
1 cup all purpose flour
1/2 cup sugar
1/2 cup or 1 medium avocado mashed
50 gm butter
pinch of salt
1 large egg
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp vanilla essence
1/4 tsp cinnamon
a handful roasted pistachios
a cheeky handful chocolate chips
Preheat oven to 170 degrees Celcius
Whisk all the dry ingredients together in a bowl then add vanilla extract, butter, egg and the mashed avocado. Mix thoroughly well with wooden spoon.
Fold in the roasted and crushed pistachio nuts.
I decided to throw in a naughty handful of chocolate chips to make this healthy bread a bit more fun. ‘Coz everything’s better with chocolate right?! 🙂
Pour mixture into lined baking dish and put in the oven.
Bake for 30-45 minutes until toothpick comes away clean.
Allow to cool and slice up for serving! Om nom nom!
